Saw this on saueshen's blog. Once again reconfirmed for me that we don't know squat about manual methods...(and why there were competitions for these sort of things...).
that is really neat actually .. the first time i've seen the japanese take so much care with drip coffee was on Bronwen Serna's camera. She casually filmed it when she was in tokyo, I have a concern about the first brewing method ... is there really a point teasing the coffee for that long?? And the whole middle of the cone poor ... i guess i will just have to try. do you think i will get a similar result with a goldswiss fiter?
The method I used is closer to the second one, though my pour is no way as precise and controlled (wonder if it has anything to do w/ my water pot also...)
Dunno about swissgold. Give it a try. The key is to NOT disturb the coffee mound (you cannot break it or it will "channel") and finish the extraction in set time. I honestly don't know how you can do it w/out a hand-pour pot though...
i think you should go to a flower shop and get yourself a nice copper ladle ... i've seen them today almost got one ... I think i will go back and grab it on monday!
well believe it or not the copper ladle i saw was like 40USD ... :) it was a decent size guessing not like Jaime's ;) lol ... this one would fit maybe 400ML maybe 500 ... the nozzle on this one was great for this sorta thing .. swedish precision .. u know, cant go wrong!
